Although mushrooms have been valued for centuries, researchers are only beginning to understand mushroom mycelium’s remarkable complexity. Mushroom mycelium is the largest and longest-living life stage of the mushroom organism, making up 95%-99% of its lifespan. Mycelium forms vast underground networks that continuously interact with their environment while producing a diverse array of unique compounds that are being studied for their potential to aid human wellness.*  

Achieving the full expression of mushroom mycelium’s beneficial potential through scalable cultivation methods requires both time and expertise. Every mushroom species grows differently, metabolizes food at its own pace, and reaches its optimal stage of development under different conditions. There is no one-size-fits-all cultivation process. 

Each of the 17 mushroom species we cultivate in the forests of the Pacific Northwest has unique biological requirements, cultivation timelines, and extraction needs. Successful cultivation depends on understanding each species' biology, carefully managing its growing environment, and harvesting it at the appropriate stage of development.

Host Defense® was founded by renowned mycologist Paul Stamets with the goal of building a bridge between people and fungi. Today, our work is supported by an experienced team of mycologists, researchers, and scientists who work on the same certified organic farm where our mushroom mycelium is cultivated. Because research and cultivation happen side by side, scientific discoveries can directly inform how we grow, harvest, test, and manufacture our mushroom ingredients. 

Our multidisciplinary research team studies fungal biology, cultivation methods, quality attributes, and emerging areas of mushroom science while continually improving our cultivation methods. Together, they’ve helped advance the scientific understanding of mushroom mycelium while ensuring our farming practices are guided by science. 

While others may focus on the cost and convenience of sourcing mushrooms overseas, we’ve invested in scientific discovery, collaborated with leading academic institutions, and helped expand the understanding of mushroom mycelium's role in supporting human wellness. Instead of viewing cultivation as a manufacturing step that adds cost to an imported commodity, we see it as an opportunity to apply science at every stage of development.
